10 Minute Microwave Roux

Ingredients
• 1 cup cooking oil
• 1.75 cups all purpose flour
Instructions
In a microwave-safe bowl, whisk together the cooking oil and all-purpose flour until well combined. Ensure there are no lumps in the mixture.
Place the bowl in the microwave and cook on high for 3 minutes. After 3 minutes, take the bowl out and stir the roux mixture thoroughly.
Microwave for an additional 3 minutes. After 3 minutes, take the bowl out and stir the roux mixture thoroughly once again.
Continue microwaving in 30 second intervals to keep from burning, stirring well after each interval. The roux will gradually darken in color.
Keep a close eye on the roux's color. Depending on your microwave's wattage, it may take approximately 5-10 minutes to achieve a medium to dark brown color, which is typical for a gumbo roux.
Be cautious when handling the bowl, as it will become hot during the microwaving process. Use oven mitts or a towel to protect your hands.
Once the desired color is achieved, remove the bowl from the microwave and let the roux cool to room temperature before using it in your gumbo or other recipes.
You can also make the roux ahead and refrigerate or freeze until ready to use.
Adjust the cooking time based on your microwave's wattage and the desired darkness of the roux. A darker roux will add a richer flavor to your gumbo. However, the darker the roux, the less thickening power it has in your gumbo, stew, or sauce.
