Taco Bell Mexican Pizza is better at home. And it’s not up for debate!

This recipe is in my Gameday eCookbook but it’s so good I couldn’t keep it to myself. Here it is, yours for FREE just in time for Cinco de Mayo!

It’s crispy, cheesy, saucy & authentic or not, it’s hands down in my top 3 Mexican food inspired dishes. And it couldn’t be any easier to make at home!

Copycat Taco Bell Mexican Pizza cut in quarters

Ingredients

flour tortillas, fajita size

oil for frying

15 oz refried beans

8 oz enchilada sauce

shredded quesadilla cheese

shredded cheddar cheese

cotija cheese

Taco Seasoning Blend

1 teaspoon sea salt

1/2 teaspoon black pepper

2 teaspoons granulated onion

2 teaspoons granulated garlic

1 teaspoon chili powder

1 teaspoon paprika

1/2 teaspoon cumin

1/4 teaspoon oregano

Beef Taco Filling

1 lb ground chuck

1 small onion, diced

1 can Rotel tomatoes

Garnish Ingredients

sliced jalapeño peppers

sliced black olives

sour cream

Mexican hot sauce

diced tomatoes

diced red onion

diced green onion

chopped cilantro

cotija cheese

Instructions

Preheat oven to 375 degrees F

Fry 2 flour tortillas on medium heat until golden brown, about 3-5 minutes flipping often, then set aside

Repeat for additional flour tortillas as needed

Sautée diced onion in skillet over medium/high heat with 2 tablespoons of cooking oil for 3-5 minutes

Add ground chuck to skillet with onions, breaking up & crumbling while it browns, cooking 6-8 minutes

Once evenly browned, drain excess fat from cooking ground chuck

Add already measured Taco Seasoning Blend ingredients to browned ground chuck & continue to cook 3-5 minutes

Add Rotel tomatoes to seasoned ground chuck, stirring to combine, then cover & reduce heat to low for 10-15 minutes

After 10-15 minutes remove skillet with taco filling from heat

On top of first fried tortilla layer heated refried beans, grated cotija cheese, cooked beef taco filling, heated red enchilada sauce & shredded cheese blend then top with second fried tortilla

Layer second fried tortilla with more enchilada sauce, shredded cheese blend & fresh sliced jalapeños

Bake at 375 degrees F for 10 minutes or until cheese is melted & pizza is heated through

Top with Garnish ingredients in order, cut pizza in quarters & enjoy!
