Honey Mustard Grilled Summer Veggies in cast iron pan

Ingredients

1/4 cup Local Hive™ Honey

3 tablespoons dijon mustard

1 yellow squash, sliced

1 zucchini, sliced

1/2 red onion, thick sliced

1 bunch asparagus, cut

5 cloves garlic, minced

8 oz grape tomatoes, halved

4 chives, fine chopped

1/2 tablespoon fresh parsley, fine chopped

2 tablespoons avocado oil

1 tablespoon sea salt

2 teaspoons black pepper

1/2 tablespoon granulated onion

1/2 tablespoon granulated garlic

1 tablespoon butter

Local Hive™ Honey in a bottle and dish with dripper

Instructions

Prep each of your main vegetables by washing and cutting into uniform sized slices, then placing in a mixing bowl combined


Fine chop garlic, rinsed & dried chives & parsley then add to mixing bowl

Add avocado oil, Local Hive™ Honey & Dijon mustard to veggies, along with already measured seasoning blend & mix to combine well

Preheat large cast iron skillet on top of bbq grill grate or high heat on stove until smoking hot

Add seasoned veggies to skillet & cook over high heat for 6-8 minutes while stirring, until veggies are tender & caramelized in color, adding butter during last minute of cooking

For additional charring, place veggies in cast iron skillet under oven broiler for 3-5 minutes

Serve hot with additional Local Hive™ Honey drizzled on top & enjoy!
