Lasagna Soup
If you’ve got some leftover pasta sauce…or not…Lasagna Soup is the recipe you need to make!
This dish is everything you love about lasagna with about half the work & in half the time.
And if you really want to make it special, get you some of those fancy mafaldine lasagna looking noodles instead of breaking up lasagna sheets. I promise they make it taste even better! #LetsVibe
Ingredients
1/2 lb mafaldine pasta, broken in half
or lasagna sheets, broken in pieces
1 cup water
3 cups pomodoro sauce
2 cups chicken broth
2 cups beef broth
1/4 cup heavy cream
1 cup fresh romano cheese, grated
2 bay leaves
1/2 tablespoon chicken bouillon
1/2 onion, diced
3 cloves garlic, minced
1/2 tablespoon fresh basil, chopped
1 lb ground turkey
1 lb turkey italian sausage, casing removed
Seasoning Blend
1/2 tablespoon sea salt
1 teaspoon black pepper
1/2 tablespoon granulated onion
1 teaspoon granulated garlic
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried savory
1/2 teaspoon dried fennel seed
Ricotta Mixture
1/2 cup ricotta cheese, whipped
1/2 tablespoon olive oil
1 cup mozzarella cheese, shredded
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 teaspoon fresh basil, chopped
Instructions
In a large sauce pan over medium/high heat sautée onions 3-5 minutes with salt & pepper to taste
After 3-5 minutes add ground turkey & turkey italian sausage, breaking up as it browns & cook 6-8 minutes
After 6-8 minutes add garlic & already measured seasoning blend
Stir & continue to cook 4-6 minutes, before adding pomodoro sauce while continuing to stir & reducing heat to low
Add chicken & beef stocks along with chicken bouillon then stir to combine
Stir in heavy cream & 1 cup of water to combine
Add in broken up pasta making sure to submerge pasta under cooking liquid in the pan
Add bay leaves then cover & simmer on low for 15-20 minutes until pasta is al denté
While pasta is simmering, combine Ricotta Mixture ingredients in a mixing bowl & stir to combine, then set aside
After 15-20 minutes remove pan from heat & stir to fully combine
Serve in shallow soup bowls with scoops of ricotta cheese mixture on top & enjoy!
