Mexican Street Corn & Steak Quesadilla

Ingredients
Chihuahua® brand Cheese from V&V Supremo®
flour tortillas, burrito size
1 lb sirloin steak, small diced
1/2 onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
Steak Seasoning
1/2 tablespoon lime juice
1 tablespoon avocado oil
1/2 tablespoon sea salt
1/2 teaspoon black pepper
1 teaspoon granulated onion
1 teaspoon granulated garlic
1/2 teaspoon cumin
1/2 teaspoon mexican oregano
Mexican Street Corn
Sierra Cotija® brand Cheese from V&V Supremo®
3 fresh ears corn, kernels only
1/2 tablespoon sea salt
1/2 teaspoon black pepper
1 teaspoon chili powder
1 teaspoon granulated onion
1/2 teaspoon granulated garlic
2 tablespoons mayonnaise
1 tablespoon sour cream
1 teaspoon lime juice
1 tablespoon cilantro, chopped
Instructions
Season small diced sirloin steak with Steak Seasoning ingredients then set aside
Combine Mexican Street Corn ingredients in a mixing bowl then set aside
In a large skillet sautée diced onion & bell peppers over medium/high heat then set aside
In same skillet, sautée marinated steak 4-5 minutes over high heat while stirring just 3-4 times
Add sautéed peppers & onions to steak then continue to cook 1-2 minutes while stirring then set aside
In a clean skillet over medium heat add a single tortilla that has been lightly coated on one side in avocado oil
Add Chihuahua® brand Cheese from V&V Supremo® to entire surface of tortilla
Add steak & veggie mixture to one half of tortilla
Add prepared Mexican Street Corn on top of steak & veggie mixture then top with additional Chihuahua® brand Cheese from V&V Supremo®
Fold tortilla over to cover side with steak, veggies & corn already on it
Allow to cook 3-5 minutes over medium heat while pressing gently with spatula
Carefully flip quesadilla over to cook addition 3-5 minutes on other side until golden brown & cheese is melted through
Remove quesadilla from heat & cut into halves or quarters
Top with V&V Supremo® Crema, crumbled V&V Supremo® Queso Fresco, fresh chopped cilantro & enjoy!
