Caribbean Green Seasoning

Cuba calls it Sofrito. In Haiti it’s Epis. Puerto Rico has Recaito. And in Argentina it’s Chimichuri. A green, herbal, aromatic & sometimes spicy seasoning base called just that in Trinidad — Green Seasoning. It’s in everything & it is good!

I added a couple tablespoons to my Caribbean Macaroni Pie recipe, seasoned some Fried Red Snapper with it & even pan seared a few chicken breasts with sautéed peppers & onions all marinated in my Caribbean Green Seasoning. Can you tell I liked Trini food just a lil bit?

Now before y’all become experts in the comments section, hear me out! I know I don’t have access to the same ingredients I experienced in Trini. But I promise you my version will give you all the island vibes & all the flavor of real Caribbean Green Seasoning.

After all, that’s the beauty of cooking with soul, right? As long as you honor the culture, respect the recipe & the secret ingredient is love, there really is no wrong way to do it. #LetsVibe

Ingredients

1 medium yellow onion, roughly cut

5 stalks green onion, roughly cut

1 rib celery, roughly cut

8 cloves garlic, peeled

12 sprigs fresh thyme, leaves only

1 bunch cilantro, bare stems removed
stems with attached leaves ok

1/2 bunch curly parsley, bare stems removed
stems with attached leaves ok

1 anaheim pepper, seeded & roughly cut

1 habanero pepper, stem removed

1/4” knob fresh ginger, peeled

1/4 cup fresh lime juice

1/4 cup white vinegar

1 teaspoon sea salt

Instructions
Makes 3 cups

Prep each produce ingredient by washing, peeling, removing stems, & roughly cutting as needed

Add each produce ingredient to food processor or large blender cup

Add fresh lime juice & white vinegar

Add sea salt

Pulse combined ingredients in food processor or blender cup until even texture is reached

Finished product will have a thick, pulp or paste like consistency

Add additional lime juice & white vinegar then continue to pulse if thinner consistency is desired

Store refrigerated up to 2 weeks in a mason jar or freeze to preserve longer

Enjoy as base flavor or added ingredient in your favorite recipes!
