Marry Me Chicken

If you want to get right for Valentine’s Day (or any day!) then Marry Me Chicken is the dish you need on the menu!

Marry Me Chicken only needs a few basic ingredients that you probably already have on hand & can easily get from the grocery store.

It’s tender, saucy, savory & I served mine over some of that fancy lasagna looking pasta. I’m telling you, this Marry Me Chicken will have you…or somebody…saying I do! #LetsVibe

Ingredients

4 chicken breasts

2 cups all-purpose flour

1 tablespoon fresh basil, chopped

Chicken Seasoning Blend

1/2 tablespoon sea salt

1 teaspoon black pepper

1/2 tablespoon granulated onion

1 teaspoon granulated garlic

2 tablespoons olive oil

2 tablespoons lemon juice

Sautée Ingredients

2 tablespoons butter

1/2 small onion, diced

1 shallot, diced

3 oz sun dried tomatoes, chopped

6 cloves garlic, minced

Sauce Seasoning Blend

1 teaspoon sea salt

1 teaspoon black pepper

1/4 teaspoon red pepper flakes

1/2 tablespoon dried oregano

1 teaspoon dried basil

1 teaspoon dried thyme

1 tablespoon fresh parsley, chopped

1/2 tablespoon chicken bouillon

Sauce Wet Ingredients

15 oz chicken broth

2 cups heavy cream

2 oz fresh parmesan, grated

salt + pepper to taste

Instructions

To a mixing bowl add chicken breasts along with Chicken Seasoning Blend Ingredients & toss to combine well

Dredge seasoned chicken breasts in all-purpose flour, shaking off excess

Allow floured chicken breasts to rest at least 10 minutes before pan frying

In a large skillet over medium/high heat, pan fry rested chicken breast in 3-4 tablespoons of cooking oil for 4 minutes on each side then set lightly cooked chicken aside

In the same skillet over medium/high heat add butter

Once butter is melted add Sautée Ingredients except for garlic & cook 4-6 minutes while stirring

After 4-6 minutes add garlic & cook additional 3-4 minutes before adding Sauce Seasoning Blend Ingredients & stirring

After 2 minutes add Sauce Wet Ingredients & continue to cook 6-8 minutes while stirring

Arrange lightly cooked chicken in skillet with sauce, adding fresh basil on top & spooning sauce over chicken

Cover skillet with a lid & reduce heat to low

Allow chicken to simmer covered for 20-25 minutes until cooked through & tender

Continue to spoon sauce over chicken, as well as flip chicken 1-2 times while simmering

Serve over mashed potatoes or cooked pasta tossed in pan sauce & enjoy!
