Honey Butter Hot Water Cornbread

Hot water cornbread is one of the best southern recipes that we do not talk about enough. My mother used to make it all the time with some blackeyed peas, cabbage, or greens.

Ingredients
• 1.5 cups cornmeal
• 1/2 cup all purpose flour
• 1 teaspoon baking powder
• 1 teaspoon sea salt
• 1 tablespoon white sugar
• 1.5-2 cups boiling hot water
Honey Butter
• 1/2 stick butter, melted
• 3 tablespoons honey
Instructions
In a mixing bowl, combine cornmeal, all-purpose flour, baking powder, sea salt, and white sugar.
Gradually pour boiling hot water into the dry ingredients. Stir continuously to form a smooth and thick dough like batter.
Add additional water 1 tablespoon at a time if batter has dry spots.
Allow the mixture to rest for 5 minutes to absorb the water.
While the batter is still warm and manageable, shape it into small patties or discs. Use your hands to form them into rounds, ensuring they are compact and hold their shape.
Heat a skillet or frying pan over medium heat. Add a small amount of oil to coat the bottom of the pan.
Place the cornbread patties in the skillet and cook until they are golden brown on each side, about 3 minutes per side. Adjust the heat as needed to prevent burning.
In a separate bowl, mix melted butter with honey until well combined.
Once the cornbread patties are cooked to a golden brown color, remove them from the skillet and place them on a serving plate.
Generously drizzle the honey butter mixture over the top of your hot water cornbread and enjoy!
