KFC Famous Bowl Loaded Baked Potato Recipe

Ingredients

2 chicken breasts, cut in 1” cubes

cooking oil for frying

cooked baked potatoes

cooked corn kernels

cooked pan gravy

shredded cheddar jack cheese

Chicken Wet Batter

1 egg

1 cup buttermilk

1/2 cup cold water

2 tablespoons yellow mustard

1/2 tablespoon sea salt

1 teaspoon black pepper

1 teaspoon granulated garlic

Chicken Dry Batter

2 cups all purpose flour

1 tablespoon sea salt

1/2 tablespoon black pepper

1 tablespoon white pepper

1 tablespoon granulated garlic

1/2 tablespoon granulated onion

1 tablespoon paprika

1 teaspoon msg

1 teaspoon ground thyme

1/2 tablespoon dried basil

1/2 tablespoon dried oregano

1 teaspoon celery salt

1 teaspoon dry mustard

1/2 teaspoon ground ginger

Instructions

In a bowl, whisk together egg, buttermilk, cold water, yellow mustard, sea salt, black pepper, and granulated garlic until smooth.

In a separate bowl, whisk together all-purpose flour, sea salt, black pepper, white pepper, granulated garlic, granulated onion, paprika, MSG, ground thyme, dried basil, dried oregano, celery salt, dry mustard, and ground ginger.

Heat cooking oil in a deep skillet or Dutch oven to 350°F (175°C).

Dip each piece of cubed chicken into the wet batter, letting the excess drip off.

Dredge in the dry batter, pressing firmly to coat well.

Fry in batches for 4-5 minutes, or until golden brown and crispy.

Remove and drain on a wire rack or paper towels.

Slice open the cooked baked potatoes, fluff the insides with a fork, and season lightly with salt, pepper, butter, and sour cream.

Top each potato with cooked corn kernels and a generous sprinkle of shredded cheddar jack cheese.

Add crispy chicken bites on top, then drizzle with warm pan gravy.

Garnish with extra cheese and chopped chives, if desired.

Serve immediately while hot and enjoy your loaded baked potato with crispy chicken bites!
