Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 tablespoon sea salt
4 tablespoons granulated sugar
1 teaspoon vanilla extract
2 cups buttermilk, cold
1.5 cups fresh blueberries (or frozen, do not thaw)
1/2 tablespoon cornstarch
1 stick butter, melted
4 tablespoons honey
Lemon Glaze:
1 cup powdered sugar
1 tablespoon fresh lemon juice
1 tablespoons milk
1/2 teaspoon vanilla extract
1/2 teaspoon lemon zest
Instructions
Preheat oven to 400°F (232°C).
In a large bowl, whisk together flour, baking powder, baking soda, sea salt, and sugar.
Stir in vanilla extract and buttermilk until just combined (do not overmix).
Toss blueberries in cornstarch, then gently fold into the biscuit batter.
Pour melted butter into a 9”x13” baking dish, ensuring an even layer.
Transfer dough to the baking dish, spreading it evenly over the butter.
Use a knife to score the dough into 9-12 square sections.
Bake for 25-28 minutes, or until golden brown and cooked through.
Let cool slightly before slicing along the scored lines.
Whisk together powdered sugar, lemon juice and zest, milk, and vanilla extract until smooth.
Drizzle over the warm biscuits and enjoy!
