Leftover Italian Beef Egg Rolls
I can eat the same thing all week long and be good. But the rest of my family? They wanna switch it up & I was not about to throw away this leftover Italian Beef!

Ingredients
leftover Italian Beef
egg roll wrappers
sweet peppers
mozzarella cheese
provolone cheese
marinara sauce
cooking oil for frying
Instructions
In a bowl, combine the leftover Italian beef, sweet peppers, mozzarella, and provolone cheese or keep ingredients separate and layer on one at a time.
Take two egg roll wrappers and stack them on top of each other to prevent tearing while rolling.
Place about 2 tablespoons of the beef and cheese mixture in the center of the stacked wrappers.
Fold the sides in and roll up tightly, sealing the edges with a dab of water.
In a deep pan, heat the cooking oil to 350°F (175°C) for frying.
