Freeze Ahead Breakfast Burritos Recipe

Mornings are rough—especially when you’re like me & not a morning person! But with two kids to get out the door for school, breakfast cannot be an afterthought.

These freeze ahead breakfast burritos to grab heat & eat have been a complete game changer for us!

Ingredients

8 burrito size tortillas

1 lb breakfast sausage, cooked & crumbled

Scrambled Eggs

8 eggs

2 tablespoons heavy cream

2 teaspoons sea salt

1/2 teaspoon black pepper

1/2 cup shredded cheddar cheese

1 tablespoon butter

Seasoned Potatoes

2 russet potatoes, cubed

1 red bell pepper, diced

1 green bell pepper, diced

1/2 yellow onion, diced

1/2 tablespoon sea salt

1 teaspoon black pepper

1 teaspoon granulated garlic

1 teaspoon granulated onion

1 teaspoon paprika

2 tablespoons cooking oil

Instructions

Heat 2 tablespoons of cooking oil in a large skillet over medium heat. Add cubed potatoes, diced bell peppers, and onions.

Season with sea salt, black pepper, granulated garlic, and granulated onion.

Sauté for 10-12 minutes, stirring occasionally, until potatoes are golden and cooked through. Set aside to cool.


In the same skillet, cook the breakfast sausage over medium heat, breaking it up as it cooks until browned and fully cooked. Drain excess grease and set aside.


In a bowl, whisk together eggs, heavy cream, sea salt, and black pepper.

Heat 1 tablespoon of butter in a pan over medium-low heat. Pour in the egg mixture, cooking slowly and stirring occasionally until soft curds form.

Stir in the shredded cheddar cheese, then remove from heat.


In a large mixing bowl, gently combine the cooked sausage, scrambled eggs, and seasoned potatoes. Toss lightly to mix the ingredients evenly without breaking the eggs or potatoes.


Lay out the tortillas and spoon the mixture into the center of each. Roll the burritos by folding in the sides, then rolling from one end to the other tightly.


Wrap each burrito in parchment paper, ensuring they are tightly sealed. Label and place the wrapped burritos in a freezer-safe bag or container.

Reheat Instructions:

Microwave: Microwave on high for 1-2 minutes, flipping halfway through. Cook until fully heated through.

Air Fryer: Place in a preheated air fryer at 350°F for 6-8 minutes until heated through.
