The Best InstantPot Chili
Cool fall weather calls for Chili! So we’re kicking off #SoupSeason with a classic.
Growing up my mother used to make a big pot of chili that we would eat off of through out the week. It would be hearty, savory & the definition of comfort food.
My recipe was giving me all those warm, nostalgic vibes. And the best part? It’s low sodium, low fat & full of flavor guaranteed! #LetsVibe
Ingredients
Base
24 oz Rao’s Marinara Sauce
20 oz diced tomatoes & green chiles
15 oz tomato sauce
6 oz tomato paste
2 tablespoons worcestershire sauce
2 tablespoons molasses
fresh juice of 1 small lime
15 oz black beans
15 oz cannelloni beans
15 oz kidney beans
15 oz pinto beans
3 bay leaves
Sautée
1/2 yellow onion, diced
1 green bell pepper, diced
2 ribs celery, diced
4 cloves garlic, chopped
2 lbs ground turkey
15 beef broth
1 tablespoon chicken bullion
Seasoning Blend
1 tablespoon sea salt
1 teaspoon celery salt
1/2 teaspoon black pepper
3 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon oregano
1/4 teaspoon ground nutmeg
1 tablespoon granulated onion
2 teaspoons granulated garlic
2 tablespoons brown sugar
1/2 teaspoon red pepper flakes (optional)
Garnish
shredded sharp cheddar cheese
shredded colby jack cheese
plain greek yogurt
chopped green onion
tortilla chip triangle
Vegan Substitutes
worcestershire sauce —> soy sauce
ground turkey —> plant based protein
beef broth —> vegetable broth
chicken bullion —> vegetable bullion
garnishes —> to your preference
Instructions
To your InstantPot add your measured Base ingredients
Next open and rinse each can of beans, then add to pot
Followed by adding your already combined Seasoning Blend
In a separate pan sautée the veggies from your
Protein ingredients over medium/high heat for 5 minutes
Then add your ground turkey to sautée pan and season with salt & pepper
Cook ground turkey through then drain & add beef broth plus bullion to pan
Transfer sautéed meat & veggies to InstantPot then stir
Set your InstantPot to chili cook setting
Cover & cook 30 for minutes
After 30 minutes, manually release the pressure & remove lid
Garnish with shredded cheese, greek yogurt, sliced green onions, tortilla chip & enjoy!
