Making these takes me back to when my mother used to bake dozens of oatmeal cookies as gifts for the holidays. And guess what she would them in? Mmhmm!

But like potato salad, oatmeal cookies should not have raisins in ‘em. I didn’t like raisins then and I don’t like raisins now.

So for my recipe we’re using Craisins® instead…dried cranberries. Plus sweet white chocolate chips and crunchy walnuts. It’s a new take on an old classic, that’s guaranteed to get your holiday cookies ate up!

And just like that…It’s too easy!

Oatmeal cranberry cookie

Ingredients

Dry Mix

1 cup dry oats

1-1/4 cup all-purpose flour

1/2 cup vanilla pudding powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

2 teaspoons cornstarch

1/2 teaspoon cinnamon

1/2 teaspoon sea salt

Wet Mix

1-1/2 sticks melted butter

1/2 cup avocado oil

1/2 cup white sugar

1/2 cup brown sugar

1 tablespoon vanilla extract

1 teaspoon maple extract

1 egg

Mix-ins

1/2 cup dried cranberries

1/2 cup white chocolate chips

1 cup chopped walnuts

Instructions

Preheat your oven to 350°F.

Line baking sheets with parchment paper.

In a bowl, combine dry oats, all-purpose flour, vanilla pudding powder, baking powder, cornstarch, cinnamon, and sea salt. Set aside.

In another bowl, mix melted butter, avocado oil, white sugar, brown sugar, vanilla extract, maple extract, and the egg until well combined.

Gradually add the dry mix to the wet mix, stirring until just combined.

Gently fold in dried cranberries, white chocolate chips, and chopped walnuts until evenly distributed throughout the dough.

Using a cookie scoop or a spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake in the preheated oven for 12-14 minutes or until the edges are golden brown.

Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Enjoy with a tall glass of ice cold milk!
