Smothered Potatoes with Sausage, Peppers & Onions
As I get older, things like pockets with zippers & brunch on the weekend have become more and more important to me.
Smothered Potatoes with Smoked Sausage, Peppers & Onions is a must have on your next brunch or breakfast menu.
This dish takes me back to growing up when my father used to make smothered potatoes with onions for breakfast on Saturday mornings.
The crispy charred smoked sausage? Blend of colorful bell peppers & onions? Those seasoned fluffy potatoes? Just like those lil burnt sausage sandwiches on white bread with mustard & a slice of cheese, this recipe will make your inner child smile! #LetsVibe
Ingredients
2 russet potatoes, washed, peeled & cut in cubes
14 oz smoked sausage, sliced in coins
4 tablespoons cooking oil
1/2 red onion, sliced in strips
1/2 red bell pepper, sliced in strips
1/2 orange bell pepper, sliced in strips
Seasoning Blend
2 teaspoons sea salt
1 teaspoon black pepper
1 teaspoon granulated onion
1 teaspoon granulated garlic
1/2 teaspoon cajun seasoning
1 teaspoon smoked paprika
1 teaspoon chopped parsley
Cheese Blend
1/2 cup colby jack, shredded
1/2 cup sharp cheddar, shredded
Instructions
Boil potatoes for 6-8 minutes in generously salted water, then drain & set aside without rinsing
In a skillet over medium/high heat sautée sliced smoked sausage in 1 tablespoon of cooking oil for 7-8 minutes while stirring until deep golden brown, seasoning lightly with salt & pepper, then set aside
In same skillet over medium/high heat sautée sliced bell peppers & onions for 5-6 minutes until golden brown, seasoning lightly with salt, pepper & granulated garlic, then set aside
In same skillet over medium/high heat, sautée boiled potatoes with Seasoning Blend ingredients in remaining cooking oil for 3-4 minutes
After 3-4 minutes add sautéed sausage, peppers & onions to skillet & cook an additional 2-3 minutes while folding in to combine ingredients evenly
After 2-3 minutes remove skillet from heat & evenly sprinkle cheese blend on top then cover with lid until cheese is melted
Serve as is, with your favorite hot sauce, or enjoy with scrambled eggs!
