Crispy Cheesy Chicken Tacos

My crispy cheesy chicken tacos with authentic La Preferida ingredients will have you craving taco Tuesday flavor every day of the week. #LetsVibe!
The convenience of quality products plus saving money on groceries has always made La Preferida one of my favorite Mexican foods brands.
For this recipe I’m using their taco seasoning, tomatoes & green chiles, with Spanish rice & refried beans on the side.
My crispy cheesy chicken tacos make the perfect plate for taco Tuesday or any day. And just like that…it’s too easy!
Ingredients
1 packet La Preferida Taco Seasoning
1 can La Preferida Tomatoes & Green Chiles
Shredded Chicken
1 lb chicken thighs
4 cups water
2 tablespoons lime juice
1 tablespoon chicken bouillon
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 onion
1 head garlic
4 sprigs cilantro
Crispy Quesadillas
1/4 cup avocado oil
12 corn tortillas
1 lb chihuahua cheese, shredded
seasoned shredded chicken
Garnish
sour cream
diced onion
chopped cilantro
Instructions
Prepare Shredded Chicken
In a pot, combine chicken thighs, water, lime juice, chicken bouillon, sea salt, black pepper, onion, garlic, and cilantro
Boil until chicken 45-60 min until cooked through
Remove chicken from broth, shred the chicken and set aside
Save broth for later use
Prepare Taco Seasoning Mixture
In a pan, mix shredded chicken, La Preferida Taco Seasoning, La Preferida Tomatoes & Green Chiles, plus 2 cups of broth from boiled chicken
Simmer on medium/low heat for 15 min, stirring on occasion
Assemble Crispy Tacos
Heat avocado oil in a skillet over medium heat
Place a corn tortilla in the skillet and add a portion of shredded chihuahua cheese
Top with seasoned shredded chicken, then more shredded cheese
Fold tortilla over in half gently with a spatula
Cook for 3-4 minutes on each side or until tortillas are golden brown and crispy
Repeat for remaining tortillas
Garnish with sour cream, diced onion, and chopped cilantro & enjoy!
