Strawberry Box Cake Banana Bread

Y’all already know how I feel about baking! So a baking hack + strawberry anything & I’m down!

So we’re using strawberry box cake mix to make a super flavorful, moist banana bread with a tender crumb.

Ingredients

15.25 oz strawberry box cake mix

1 cup strawberries, diced

1/4 teaspoon lemon juice

1 tablespoon freeze dried strawberry powder

3 medium size overripe bananas, mashed

Wet Ingredients

1/2 tablespoon vanilla extract

1/4 cup avocado oil

2 tablespoons butter, melted

2 large eggs

Instructions

Fine dice strawberries then mix with lemon juice & freeze dried strawberry powder in a small dish

Mash overripe bananas in a mixing bowl until an even consistency is reached

Add remaining wet ingredients to mixing bowl & whisk to combine

Add strawberry box cake mix to mixing bowl & fold in until just incorporated, taking care not to over mix

Pour batter into a greased 8x4” loaf pan & bake at 350 degrees for 60-65 minutes until a toothpick comes out clean

After baking allow bread to rest 10 minutes before removing from pan

Allow to cool completely before slicing & enjoy!
