Chili Cheese Rotel Dip

Ingredients
• 1 lb ground beef
• 1 teaspoon baking soda
• 1/2 yellow onion, diced
• 2 cloves garlic, minced
• 15 oz can pinto beans, rinsed
• 2 cans diced tomatoes & green chiles (10 oz each), drained
Cheese Sauce
• 2 cups half ’n half
• 8 oz sharp cheddar cheese, shredded
• 16 oz colby jack cheese, shredded
• 8 oz Italian blend cheese, shredded
Chili Seasoning
• 1/2 tablespoon sea salt
• 1 teaspoon black pepper
• 1/2 teaspoon celery salt
• 2 tablespoons chili powder
• 1/2 tablespoon ground cumin
• 1 teaspoon dried oregano
• 1/8 teaspoon ground nutmeg
• 1 tablespoon granulated onion
• 2 teaspoons granulated garlic
• 1 tablespoon brown sugar
• 1 teaspoon red pepper flakes
Instructions
Add sea salt, black pepper, celery salt, chili powder, ground cumin, dried oregano, ground nutmeg, granulated onion, granulated garlic, brown sugar, and red pepper flakes to a small dish and set aside.
In a skillet, brown the ground beef over medium heat. Add baking soda to the beef while cooking to aid in browning. Once browned, drain excess fat.
Add diced yellow onion and minced garlic until softened.
Rinse the pinto beans and add them to the skillet with the sautéed aromatics and cooked ground beef. Stir to combine.
Add 2/3 of chili seasoning blend then stir well to incorporate the spices.
Add drained diced tomatoes & green chiles and mix to combine well.
In a separate pot over medium-low heat, combine half ’n half, shredded sharp cheddar, colby, pepper jack, and Italian blend cheeses a bit at a time. Stir frequently until the cheeses melt and form a smooth sauce.
Add remaining chili seasoning blend to melted cheese sauce then stir well to combine spices.
Pour the cooked chili base into the melted cheese sauce. Mix thoroughly, ensuring the beef, beans, and aromatics are evenly coated with the cheesy chili goodness.
Allow the Chili Cheese Rotel Dip to simmer for a few minutes, allowing the flavors to meld. Once heated through, transfer to a serving dish.
Garnish with your favorite toppings such as chopped green onions, cilantro, or a dollop of sour cream. Serve with tortilla chips and enjoy the hearty and flavorful Chili Cheese Rotel Dip!

• Draining the tomatoes & chilis is important to make sure you don’t end up with a watery cheese sauce, but if it’s too thin you can thicken with a cornstarch + water slurry.
